The famous brunch dish you should never order, according to Anthony Bourdain

And unfortunately, it’s a crowd favourite.

Brunch has become the ultimate millennial past time around the world – and it’s no different in Singapore. Our pint-sized city boasts of an impressive list of delicious brunch cafes, all outdoing the other with its mouthwatering menu offerings. As such, our ears perked when we heard of Anthony Bourdain’s denouncement of a world-famous brunch dish to never order at a restaurant.

Brace yourself for the disappointment: it’s none other than the much-loved eggs benedict.

Blame it on the (Hollandaise) Sauce

Much of the appeal of the egg benedict lies in the deliciously warm and satiny hollandaise sauce drizzled over the indulgent combination of bacon and poached egg nestled on English muffins. Unfortunately, it is also precisely the reason why you should opt out of ordering the dish the next time you’re at brunch.

“Bacteria love hollandaise,” reveals Anthony Bourdain in his book, Kitchen Confidential. “And nobody I know has ever made hollandaise to order. Any place that makes hollandaise should throw it out about every hour and make a fresh batch, otherwise it can hurt you.”

According to the famous chef, restaurants use brunch as a way to serve leftovers from the previous night’s dinner service – and unfortunately, the hollandaise sauce is usually the one that suffers. Who knew?

He also cautions that restaurants are probably serving you recycled bread that went uneaten. “If a (waiter) sees a basket of untouched bread, he’ll probably bring it back to the kitchen to serve again later,” he states.

Alas – what does a girl need to do to get some good, fresh eats out here?
