His sheer dedication and work is reflected in his generous and delicate pastry offerings where everything is hand-made with special attention to detail. All Japanese ingredients are flown directly from Japan. By beautifully mastering the art of Japanese and French p\u00e2tisserie, he unveils four kinds of cakes this Christmas. A classic chocolate sponge and peaches b\u00fbche de No\u00ebl, two squares of Christmas cakes flavoured with green tea and red bean cream, and for the second with Japanese chestnuts. In Japan, the most popular festive cake is Ichigo Santa, featuring a soft sponge cake with strawberries.<\/p>
