Refrigeration : 6h<\/strong><\/p>

Cooking time: 10 minutes<\/strong><\/p>

Serves 4-6 people<\/strong><\/p>

Ingredients:<\/strong><\/p>

- 7\/800gr Asparagus
- 20cl liquid cream
- 4 leaves of gelatine
- 12 slices of smoked duck breast<\/p>

Method:<\/p>

1. Immerse gelatin sheets in cold water. Peel the asparagus. Cut round heads at the height of the circle of pastry.<\/p>

2. Cook heads 3 to 4 minutes in boiling salted water for 10 minutes.<\/p>

3. Cool them immediately in ice water, then drain.
4. Drain gelatin, melt in a saucepan over very low heat, stirring.<\/p>

5. Mix the asparagus stems with a mixer, add the melted gelatin while continuing to mix and finally, the salt and pepper .
6. Add the whipped cream into the asparagus puree .
7. Line a stainless steel circular pan or a charlotte mold with asparagus heads. \u00a0\u00a0\u00a08. Pour the mixture into it.<\/p>

9. Refrigerate at least 4 hours before turning gently.<\/p>

Divide the slices of smoked duck breast on charlotte before serving.<\/p>
