Cooking time<\/span>: 20 min<\/p>

Serves 4 people<\/span><\/p>

Ingredients<\/span>:<\/h2>

- 500 g<\/span> potatoes<\/span>, cut into wedges<\/p>

- 1 mango<\/span>, peeled and chopped<\/span><\/p>

- 1\/2 red<\/span> onion, peeled<\/span> and<\/span> finely chopped<\/span><\/p>

- 1 handful of<\/span> fresh basil leaves<\/span><\/p>

- 1 handful<\/span> of rocket leaves<\/span><\/p>

- 1<\/span> pinch of<\/span> ground pepper<\/span><\/p>

- Lime juice<\/span><\/p>

Method:<\/p>

1. Place peeled and cut<\/span> potatoes<\/span> in a saucepan,<\/span> cover with<\/span> water<\/span>, bring to boil and<\/span> simmer<\/span> covered for<\/span> 15-20<\/span> minutes.<\/span><\/p>

2. Meanwhile<\/span>, place the mango<\/span>, onion, basil, arugula and pepper in<\/span> a large bowl<\/span> and stir<\/span> firmly.<\/span><\/p>

3. Drain the<\/span> potatoes<\/span> and<\/span> let them cool<\/span>.<\/p>

Arrange<\/span> them in<\/span> bowls<\/span>. Sprinkle with<\/span> lime juice<\/span> and stir<\/span> salad. Serve.
