Green algae is rich in vitamin C and iron;\u00a0red algae in vitamin B and protein;\u00a0and brown in calcium.<\/em><strong><em><\/em><\/strong><\/p>  <p><strong>In flakes or sheets:\u00a0<\/strong><\/p> <p>These are the easiest to work with.\u00a0\"We can sprinkle them over vegetables: dulse, with its red tints and little woody notes, goes well with tomato;\u00a0sea \u200b\u200blettuce, with its fresh green flavour, is suitable\u00a0in salads.\u00a0You can also use it as a garnish on fish,\u201d says Olivier Bourtourault, from the Alga\u00efa society in France.<\/p> <p>He advises to try some <em>wakamole<\/em>, obtained by mixing a tablespoon of wakame (Japanese seaweed), an avocado, oil, pepper, <a href=\"http:\/\/www.mariefranceasia.com\/health\/on-my-plate\/6-reasons-you-should-garnish-your-dishes-with-garlic-4241.html\">garlic and salt<\/a>.\u00a0As for the one-minute\u00a0<em>tartar<\/em>, add flakes of seaweed to a mixture of salad, shrimp or prawns, lemon juice, oil and a juicy fruit like tomato, to obtain the correct consistency.\u00a0Alternatively, sprinkle over some Japanese <em>nori<\/em>, which can be easily cut with scissors, to perk up a common potato or carrot salad.<\/p>  <p><strong>Whole:\u00a0<\/strong><\/p> <p>Breton <em>kombu<\/em>, rich in monosodium glutamate, enhances the flavour of legumes (eg.: lentils, beans) when it is added to the water before boiling. Sea cabbage (or royal <em>kombu<\/em>), with its frills, makes a very aesthetically pleasing addition to fish or vegetables.<\/p>  <p><strong>As an infusion or snack:\u00a0<\/strong><\/p> <p>For your daily iodine intake, Anne Brunner,\u00a0author of <em>Algues: saveurs marines a cuisinier (La Plage) (Algae:<\/em><em> Marine flavours to cook)<\/em>, thought up two uses of algae for the less adventurous: a refreshing infusion made \u200b\u200bwith a teaspoon of sea lettuce flakes and a pinch of black tea;\u00a0and for the hot days ahead, a summer snack made with a sheet of <em>nori<\/em> cut in half, toasted 1 minute in a hot dry pan and crumbled over half a melon or honeydew.<\/p>  <p><strong>Where can we find it?<\/strong><\/p> <p>Thankfully, seaweed is not a rare commodity in the region.
