Cut the radish tops. Take about a quarter of the tops. Dry and cut into thin slices.<\/p>  <p>2) Wash, dry and chop the spring onions (bulb and tops).<\/p>  <p>3) In a bowl, prepare vinaigrette: place a pinch of salt, vinegar and oil . Pour radish and dress with the vinaigrette. Add the chopped spring onion. Mix well.<\/p>  <p>4) In a bowl, with a hint of wasabi and a dollop of ricotta to dilute. Add remaining ricotta and mix well.<br \/> 5) Mount glasses : drop in each glass a little ricotta wasabi, the radish tops and finish with chopped radish salad.<\/p>  <p>Serve according to the taste with buttered brown bread or breadsticks with sesame.<br \/> <strong>Tip:<\/strong> Three quarters of the remaining stalks can be used to make a delicious soup. Wash, chop coarsely and melt with a knob of butter in a saucepan for 5 minutes. Add on 4 plates, a potato puree (washed , peeled) cut into cubes 75 ounces of water , a little salt and cook for 15 min.
