Wash the spinach. Saut\u00e9 for 2 minutes with a little olive oil and add salt and pepper to taste. Season with freshly grated ginger<\/p> <p>2) With the tip of a knife, open quail eggs and cook the dish in a nonstick skillet over low heat with a little butter<\/p> <p>3) Arrange the toasts on each file toast a little spinach with ginger and 3 quail eggs fried<\/p>  <p><strong>Flavours<\/strong>: Spinach fondue is a basic that fits in many with many dishes: in a quiche or a risotto with gnocchi, fresh pasta with parmesan petals or casserole eggs dressed with fresh chopped coriander for an exotic or sorrel for a more sour touch, as an accompaniment to fish ... it all goes!<\/p>
