{"id":345764,"date":"2014-02-24T13:33:41","date_gmt":"2014-02-24T05:33:41","guid":{"rendered":"http:\/\/www.mariefranceasia.com\/uncategorized-hk\/madeleines-sweet-potato-345764.html"},"modified":"2014-02-24T13:33:41","modified_gmt":"2014-02-24T05:33:41","slug":"madeleines-sweet-potato","status":"publish","type":"post","link":"https:\/\/www.mariefranceasia.com\/hk\/food-hk\/recipes-and-products-hk\/madeleines-sweet-potato-345764.html","title":{"rendered":"Recipe: Sweet Potato Madeleines"},"content":{"rendered":"<p><a href=\"http:\/\/www.mariefranceasia.com\/wp-content\/uploads\/sites\/7\/2014\/02\/madeleinessweetpotato.jpg\"><span style=\"display: block;\" class=\"wrap-img\" id=\"wrap-img-8930\"><img loading=\"lazy\" decoding=\"async\" itemprop=\"thumbnailUrl\" class=\"size-full wp-image-8930 img-responsive  aligncenter\" src=\"http:\/\/www.mariefranceasia.com\/wp-content\/uploads\/sites\/7\/2014\/02\/madeleinessweetpotato.jpg\" alt=\"madeleinessweetpotato\" width=\"650\" height=\"550\" \/><\/span><\/a><\/p> <p><strong>Preparation time:\u00a0<\/strong>\u00a0Approx.\u00a060 minutes (plus cooling time)<\/p> <p><strong>Enough for approx.\u00a020 pieces:<\/strong><\/p> <p>125g of sweet potatoes<\/p> <p>2 eggs (large size)<\/p> <p>50g of soft butter<\/p> <p>1 teaspoon of orange zest<\/p> <p>125g\u00a0of sugar<\/p> <p>200g flour<\/p> <p>\u00bd teaspoon of baking powder<\/p> <p>1 teaspoon of icing sugar for dusting<\/p> <p>Butter and flour to coat the madeleine\u00a0mold<\/p>  <p><strong>Preparation:<\/strong><\/p> <p><strong>1.\u00a0 Peel, cut<\/strong> into small pieces and cook the sweet potatoes for 10 minutes in salted water.\u00a0<strong>Drain<\/strong> and let cool for a moment.\u00a0<strong>Reduce<\/strong> them and mash them with a potato masher.\u00a0Let cool once completely mashed.\u00a0Grease the bottom of a madeleine pan and sprinkle a thin layer of flour.\u00a0Separate the yolks from the egg whites.\u00a0Beat the egg whites until stiff.<\/p>  <p><strong>2.\u00a0 Add<\/strong> the butter, orange zest and sugar to the mashed sweet potatoes.\u00a0<strong>Beat<\/strong> well until smooth.\u00a0Put some egg yolks one by one and mix thoroughly.\u00a0<strong>Mix<\/strong> flour with baking powder and stir it quickly.Then stir in 1\/3 of the egg whites.\u00a0Finish by gently incorporating the remaining whites.<\/p>  <p><strong>3.\u00a0<\/strong>Put the dough in a pastry bag with a large tip and spread it into the mold cavity madeleine.\u00a0<strong>Bake<\/strong> in preheated 200\u00b0C (convection oven: 180\u00b0C) oven for 10 to 12 minutes.\u00a0<strong>Remove<\/strong> the pan from the oven.\u00a0<strong>Unmold<\/strong> the madeleines.\u00a0<strong>Wash<\/strong> the mold.\u00a0<strong>Grease and flour<\/strong> it again and fill the rest of the dough.<strong>\u00a0 Cook<\/strong> the same way.<\/p>  <p><strong>4.\u00a0 Let cool<\/strong> on a madeleine cake rack.\u00a0<strong>Sprinkle<\/strong> with icing <a href=\"http:\/\/www.mariefranceasia.com\/diet-without-sugar-salt-gluten-or-lactose-for-whom-and-how\/\">sugar<\/a> and serve immediately.<\/p>   <p><strong>Try more<strong>\u00a0<\/strong><\/strong><a title=\"Sweet potato recipes for every palate!\" href=\"http:\/\/www.mariefranceasia.com\/madness-sweet-potato-leaving-in-a-strange-land\/\">sweet potato<\/a>\u00a0<strong>recipes:<\/strong><\/p> <p><a title=\"Recipe: Crispy sweet potatoes with ham\" href=\"http:\/\/www.mariefranceasia.com\/crispy-sweet-potatoes-with-ham\/\">Crispy sweet potatoes with ham.<\/a><\/p> <p><a title=\"Recipe: Sweet Potato Quiche with Tapenade\" href=\"http:\/\/www.mariefranceasia.com\/sweet-potato-quiche-with-tapenade\/\">Sweet Potato Quiche with tapenade.<\/a><\/p> <p><a title=\"Recipe: Mounds of sweet potatoes with figs and brie\" href=\"http:\/\/www.mariefranceasia.com\/mounds-of-sweet-potatoes-with-figs-with-brie\/\">Sweet potato mounds with figs and brie.<\/a><\/p> <p><a title=\"Recipe: Sweet Potato Madeleines\" href=\"http:\/\/www.mariefranceasia.com\/madeleines-sweet-potato\/\">\u00a0<\/a><\/p> ","protected":false},"excerpt":{"rendered":"<p>A sweet potato dessert?
