{"id":346127,"date":"2013-11-26T13:30:38","date_gmt":"2013-11-26T05:30:38","guid":{"rendered":"http:\/\/www.mariefranceasia.com\/uncategorized-hk\/seared-ahi-tuna-recipe-346127.html"},"modified":"2013-11-26T13:30:38","modified_gmt":"2013-11-26T05:30:38","slug":"seared-ahi-tuna-recipe","status":"publish","type":"post","link":"https:\/\/www.mariefranceasia.com\/hk\/food-hk\/recipes-and-products-hk\/seared-ahi-tuna-recipe-346127.html","title":{"rendered":"Seared Ahi Tuna recipe"},"content":{"rendered":"<p><a href=\"http:\/\/www.mariefranceasia.com\/wp-content\/uploads\/sites\/7\/2013\/11\/seared-tuna-recipe1.jpg\"><span style=\"display: block;\" class=\"wrap-img\" id=\"wrap-img-5402\"><img loading=\"lazy\" decoding=\"async\" itemprop=\"thumbnailUrl\" class=\"aligncenter size-full wp-image-5402 img-responsive \" src=\"http:\/\/www.mariefranceasia.com\/wp-content\/uploads\/sites\/7\/2013\/11\/seared-tuna-recipe1.jpg\" alt=\"seared-tuna-recipe\" width=\"602\" height=\"451\" \/><\/span><\/a><\/p> <p><strong>Serves 1 | Takes 35 minutes<\/strong><\/p>  <p><strong>Ingredients:<\/strong><\/p> <p>Fresh ahi tuna<\/p> <p>Fresh oyster<\/p> <p>Microgreens<\/p> <p>Yellow squash<\/p> <p>Grated horseradish<\/p> <p>Ketchup<\/p> <p>1 Lemon<\/p> <p>Vegetable oil<\/p>   <p><strong>Sauces:\u00a0<\/strong><\/p> <p>Orange glaze<\/p> <p>2 Cups of pulp-free fresh orange juice (not from concentrate)<\/p> <p>1\/2 Teaspoon of soy sauce<\/p> <p>2 Tablespoons of butter<\/p> <p>3 Drops of sesame oil<\/p> <p>Teriyaki sauce (store-bought)<\/p>   <p><strong>Method:\u00a0<\/strong><\/p> <p>1) Place 2 cups of orange juice in saucepan and reduce on medium heat (low simmer) until it becomes a syrup. Add soy sauce and mix well then take the pot off of the heat and slowly incorporate the butter and sesame oil with a whisk until the mixture is smooth.<\/p> <p>2) Cut ahi tuna into a rectangular block and season with sea salt. Set aside for 10-15 minutes to slightly bring up the internal temperature.<\/p> <p>3) Shuck oyster and place on ice.<\/p> <p>4) Mix ketchup, horseradish and lemon juice to make cocktail sauce for oyster. Proportions will be based on personal preference.<\/p> <p>5) Toss microgreens with a squirt of lemon juice, vegetable oil, and a drop or two of sesame oil.<\/p> <p>6) Preheat a non-stick pan and place one tablespoon of oil in it. Sear tuna for 20-30 seconds per side (depending on heat of pan) then remove.<\/p> <p>7) Create a design on the plate with teriyaki sauce being the border and fill with the orange glaze. Creating circular shapes will provides an area for the orange sauce.<\/p> <p>8) Cut tuna and place in the center of the orange sauce with a small bundle of microgreens on top.<\/p> <p>9) Use a vegetable peeler to create long, thin pieces of yellow squash. Roll the pieces up and use them to create a bed for the oyster. Place oyster in-between two pieces of squash.
