Prata Breakfast Deluxe!

Serves 2 | Takes 30 minutes
Ingredients:
2 Roti prata
5 eggs
3 Cherry tomatoes
2 Tbsp tartar sauce
3 Tbsp fresh milk
1 Tbsp truffle oil
1 Tbsp of sesame sauce
2 Servings of mesclun salad
10 Chicken karages/ 2 Dory fish fillets
Salt & Pepper
Method:
- Fry the pratas on both sides till crispy. Strangely, no oil is needed! Set aside.
- Put the mesclun salad, halved cherry tomatoes and sesame sauce in a bowl. Mix well and leave aside.
- Break 5 eggs into a heated pan and stir continuously. Make sure it is on the lowest heat possible.
- Slowly, add in the fresh milk and salt & pepper to taste. Keep stirring until it’s cooked thoroughly. However, do not overcook, as you'd want them moist! Set aside.
- Deep fry the chicken karages/ dory fish filets till cooked.
- Now, place the prata on the plate. Top it up with your salad, scrambled eggs and chicken karages/ fish fillets.
- Drizzle the tartar sauce over the fish fillets, followed by the truffle oil on your scrambled eggs.
- Serve with a big smile!
