Dessert: Mixed Berry Tart recipe

Tart sucrée, makes one 18cm tart base
Ingredients:
150g Flour
95g Sugar
1 Egg
120g Unsalted butter
Method:
1. Sift flour into a mixing bowl. Add in sugar. Mix well.
2. Add in egg. Use hands to mix the egg into the flour mixture.
3. Rub in butter till combined and becomes a dough.
4. Place dough in a plastic wrap and cover tightly. Refrigerate for 2 hours.
5. Roll dough to about 1cm thickness.
6. Place dough onto a 18cm tart mould and press lightly into the edges. Trim off any excess dough.
7. Use fork to make holes on the dough. Refrigerate.
Almond cream filling, makes one tart
Ingredients:
160g Unsalted butter
100g Sugar
2no Eggs
180g Almond powder
Method:
1. Whisk butter and sugar till pale white.
2. Add in eggs one at a time and mix well.
3. Sift in almond powder and mix well.
Assemble:
1. Preheat oven to 175°C
2. Spread almond cream filling evenly onto the tart sucrée. Add fresh blueberries.
3. Bake for 40-45 minutes.
4. Decorate with fresh cream and fruits.
