Recipe: Apples, Orange and Chestnut Crumble Tartlet

Serves: 4
Ingredients:
- 200 g potatoes
- 4 red pippin apples
- 30 g honey
- 40 g chestnut flour
- 4 oranges
- 1 dl of argan oil
- 1 vanilla pod
- 12 currants (or raspberries)
Method:
1. Slice potatoes thinly and brush with a mixture of honey and argan oil.
2. Line a tin (10 cm in diameter) with the brushed potatoes, giving the form of a pie shell. Bake at 140 ° C until browned.
3. Using two of the oranges and 2 of the apples, make a compote with orange cubes, apple, and caramelized honey.
4. Slice the other two apples and oranges and brown them in caramelized honey.
5. Layer the baked potato with the caramelized apple and orange slices.
6. Drizzle the compote on the top.
7. Combine chestnut flour , argan oil and honey to make the crumble. Sprinkle the crumble over the compote.
8. Garnish with currants and a little mint.
9. For a more exotic touch, add a scoop of sorbet on the side. Raspberry sorbet with basil undertones would do nicely.
