Christmas Recipe: Chestnut Tiramisu in Verrine Glasses

Ingredients
250 g mascarpone cheese
3 eggs
12 ladyfingers
10 cl coffee
3 tablespoons of granulated sugar
3 tablespoons of marsala
6 candied chestnuts
1 edible gold leaf
Salt
Directions
- Break the eggs and separate the yolks from the whites. Whisk yolks with sugar until the mixture turns pale and fluffy. Add the mascarpone cheese.
- With a pinch of salt, whip the egg whites to firm peaks. Combine gently to the mascarpone mixture with a rubber spatula. Store in the fridge.
- In a shallow dish, stir coffee with marsala. Cut the ladyfingers to the size of the bottom of the glass. Dip them quickly in the coffee mixture making sure they are soaked, but not too soft. Place them in the bottom of the glass.
- Pour a layer of mascarpone cream over, then add another layer of coffeesoaked ladyfingers. Pour a second layer of mascarpone cream to the top of the glass.
- Cover with a plastic wrap and place in the refrigerator for 6 hours.
- Before serving, sprinkle with crumble candied chestnuts. Serve chilled.
