Recipe: Crispy sweet potatoes with ham

Preparation time: 40 minutes
Ingredients for 4 people:
2 Large sweet potatoes (about 400g)
Salt and pepper
1 egg
2 tablespoons of flour
5 tablespoons of breadcrumbs
2-3 tablespoons of oil
100g of mayonnaise
1-2 teaspoons of Dijon mustard
50g watercress
1 baguette (approx. 300g)
100g French ham – air dried and thinly sliced
Preparation:
1. Peel the sweet potatoes . Cut them in lengthwise slices of 5mm thickness. Blanch for 2 minutes in boiling salted water. Drain them and set aside on paper towels. Salt and pepper each slice. Beat the egg. Immerse the potato slices first in flour, then in egg and finally in breadcrumbs. Let them brown on all sides in hot oil for 5-7 minutes. Let them cool.
2 . For the cream Dijon mustard, mix mayonnaise with mustard. Wash the watercress. Cut the bread into four pieces, and open each piece of bread with a knife. Spread bread slices with mustard cream. Fill the bottom of the bread with sweet potato slices, ham and watercress. Cover each sandwich with the other half of bread.
