Recipe: Sweet Potato Quiche with Tapenade

Quiche is a quick and easy weekend meal to please everyone. But for a change, do it with sweet potato and tapenade. Yum!

Preparation time:  approx. 1 ½ hours

Enough for approx. 12 slices:

200g flour

100g cold butter

4 eggs (medium size)

Salt and pepper

600g sweet potatoes

1 Bbunch of spring onions

1 tablespoon of oil

1 teaspoon of dried thyme

200g cream fraîche

Nutmeg

Butter to coat the mold

Stretchable plastic film

1 sheet of parchment paper

1 layer of dried vegetables to cook with the pulp

For the tapenade:

100g black olives with no seeds

1 tablespoon of pickled capers

2 pickled anchovy fillets

1 clove of garlic

3 tablespoons olive oil

Preparation:

1. Put  the flour, butter, 1 egg and a pinch of salt in a bowl and mix quickly. The dough should be smooth and homogeneous. Place the dough between two sheets of plastic wrap and spread it to obtain a circle about 32 cm in diameter. Go for a quiche dish 26cm in diameter. Prick the dough with a fork and let rest in the fridge for 30 minutes.

2. Peel  and cut sweet potatoes into slices 2mm thick. Clean, wash and cut the onions into rings. Book a few green onions for garnish. Fry  the potatoes and the onions for approx. 5 minutes in the hot oil. Season  with salt, pepper and thyme.

3. Whip  the cream with three eggs. Season generously with salt, pepper and nutmeg.

4. Cover the dough with parchment paper and cover it with a layer of dried grains (beans / lentils / chickpeas). Place the dough in the oven preheated to 200 ° C (convection oven: 180 ° C) on the lower rack and cook it for 15 minutes. Remove the paper with the grains. Divide the mixture of sweet potatoes and onions on the bottom and pour the egg and cream. Put the pan on the lower oven rack and cook for 30 minutes.

5. Put the olives, capers, anchovy fillets and peeled garlic cloves in a blender and grind them to a purée. Pour in the olive oil and stir well to very smooth mixture. Use green onions to sprinkle the quiche and serve with tapenade.
