7 Summer Mains: Cucumber Club sandwich with Mozzarella and Haddock
updated the 28 August 2015 à 17:38The perfect club sandwich? A great way to get your children into the habit of eating healthy, raw foods.
Preparation: 10 minutes
Ingredients for 4 children:
– 2 cucumbers
– 1 tablespoon mustard
– 12 slices white bread crumbs
– 2 balls of mozzarella Buffala
– 200g of haddock sliced
– 1 tablespoon olive oil
– Sea salt and pepper
Method:
1. toast the slices of bread. Spread a thin layer of mustard on each slice. Put 4 aside.
2. Slice the cucumbers, keeping the skin on, and cut the mozzarella into slices.
3. Divide the cucumbers on bread and season with olive oil, salt and pepper. 4. Cover with a slice of bread and spread over the mozzarella and a slice of haddock. Cover with bread slices aside.
Scrape the crusts and cut into triangles.
