Recipe: Mashed Potatoes Hazelnut and Pistachio Rolls

Discover a new way to enjoy potatoes with this recipe combining our favourite carb, hazelnuts and pistachios. A feast for the eyes and taste buds!

Pistachio

Cooking time: 25 minutes

Preparation time: 15 minutes

Serves: 4

Ingredients:

– 8 potatoes Honey (average sized)

– 100g of salted butter

– 10ml full-fat milk

– 50g hazelnuts

– 50g pistachio kernels

– 1 tablespoon hazelnut oil

– Salt and pepper

Method:

1) Preheat oven to 180°C.

2) Boil the potatoes in their skins, on medium to high heat, until they are cooked

3) Immerse cooked potatoes in cold salted water for 20-25 min.

4) Crush the hazelnuts and pistachios. Roast the hazelnuts in the oven at 180°C for 3-4 min.

5) Heat the milk in a saucepan.

6) Peel the boiled potatoes and mash them by adding hot milk , butter, hazelnut oil and roasted hazelnuts. Season with salt and pepper.

7) On cling film, make a puree tube with the mixture.  Cut rolls of 3cm long from the mould. Roll mixture in the crushed pistachios.

8) Arrange on plates, serve and enjoy.
