Recipe: Duck breast with caramelised melon

We love melon for its fragrant flesh and nutritional values. Often enjoyed raw, you can also serve it fried in a more sophisticated cuisine. Here’s one recipe.

Serves 2 | Takes 50 minutes

Ingredients:

1 Melon
1 Duck
30g Powdered sugar
1 Lemon
1 Star anise
1 Vanilla pod
Some peppercorns
Salt to taste

Method:

1. Lightly pan fry the breast’s skin in a hot pan. Let the fat melt and brown for 2 minutes over medium heat on both sides.
2. Reserve the skillet.
3. Place the duck in a baking dish and season with salt and pepper.
4. Then bake in a preheated oven at 220 °C ( gas mark 7-8 ) for 6 minutes for medium pink.
5. Leave duck for 5 minutes under a sheet of aluminium foil before carving.
6. In a baking pan, de-glaze by pouring a glass of water.
7. Add star anise, vanilla seeds and stir with a wooden spoon.
8. Boil for about 3 minutes then remove from heat .
9. Meanwhile , cut the melon into 6 wedges with skin and seeds removed.
10. Squeeze the lemon juice in a skillet and melt the sugar to light caramel, then place melon and cook for about 5 minutes on each side.

Thinly slice the duck and serve with caramelized melon.

Top tip: Choose a meduim-sized melon.
