Sushi Special: Sweet Peach Sushi recipe

Follow our sweet sushi recipe – a traditional dish revisited with a sweet summer twist.

INGREDIENTS

6 YELLOW PEACHES
200G THAI OR JAPANESE STICKY RICE
110G CASTER SUGAR
50 CL OF COCONUT MILK
1 SACHET OF VANILLA SUGAR (available at leading grocery stores)

GENERAL INFORMATION
PREPARATION TIME: 20 MINUTES
COOKING TIME: 20 MINUTES
SERVES: 6 PEOPLE

PREPARATION
Soaking 6 hours, Resting time 1h 10

  1.  Soak rice in a bowl of water for 6 hours.
  2.  Drain it and cover it with twice its volume of cold water. Bring to a boil, then cook for 15 minutes with the lid on. Leave it to stand for another 10 minutes off the heat.
  3.  Heat the coconut milk with the sugar and vanilla sugar.
  4. Put the cooked rice in a bowl, add the coconut milk with sugar and mix well. Cover and allow it to stand for 1 hour.
  5.  Spread a 3cm layer of the rice on a dish to dry.
  6.  Peel and de-core the peaches. Cut them, half sliced ​​and the other half diced.
  7.  Mould the rice dumplings, slightly flattened. Place them in a serving dish. Cover each sushi with a strip and some cubes of peach. Serve chilled.
