Recipe: Florida grapefruit sushi

Preparation time: 20 minutes – Cooking time: 40 minutes – Rest time: 1:00
Ingredients for 4 people:
For the rice pudding:
150g round rice
500ml milk
100g Sugar
50g Mascarpone cheese
1 Sachet of vanilla sugar
For the filling:
2 Florida grapefruits
20g grated coconut
For the sauce:
1 Florida grapefruit
2 tbsp. Honey
2 tbsp. Sesame seeds
Method:
1. Cook rice in a large saucepan of boiling water for 5 minutes.
2. Drain it and then pour the milk into a saucepan and cook over low heat for 25 minutes.
3 . Off the heat, add the sugar and stir well. Allow to cool.
4. Take the pulp wedges of two grapefruits.
5. Stir the mascarpone rice pudding and form elongated shapes for the sushi.
6. Place the grapefruit sushi pulp wedge on each rice dumpling and sprinkle with coconut. Serve with a sauce made with the juice of Florida grapefruit, honey and sesame seeds.
