Grapefruit recipe: Sweet paradise biscuits

Preparation time: 20 minutes – cooking time: 25 minutes
Ingredients for 20 biscuits:
Shortbread dough
250g Flour
150g Soft butter
60g Icing sugar
½ tsp. Salt
Florida grapefruit cream filling
Juice of 2 lorida grapefruits
Finely grated zest of a grapefruit
60g Sugar
3 Eggs
180g White chocolate
Method:
1. Beat the sugar and butter until the mixture becomes pale then add the flour.
2. Knead the dough well by hand to get a good soft ball.
3. Flour the work surface and roll out the dough to a thickness of about 3 mm. Using a cookie cutter, cut out shapes in dough and place them on a baking sheet lined with parchment paper.
4. Place the plate in the refrigerator for one hour.
5. Preheat oven to 180 °C (gas mark 6) and bake for about 15 minutes. Let it cool on a rack.
6 . Meanwhile prepare the Florida grapefruit filling. In a pyrex bowl or stainless steel, pour the grapefruit juice, zest, sugar and eggs.
7. Lave it to thicken in a water bath, while stirring constantly.
8 . Meanwhile, melt the chocolate in a bain-marie. Stir grapefruit cream with the chocolate.
9. Let the mixture cool to room temperature then pour it into a piping bag. Apply it onto the surface of a biscuit then cover with another one. Repeat on all.
