Duck’s Fat Hope – Peking duck jus
What’s in a (cheeky) name? A daiquiri with an unexpected oriental twist. The savoury flavours in Duck’s Fat Hope at rooftop bar Smoke and Mirrors come from Peking duck jus. Other ingredients in this oddly addictive cocktail are jackfruit rum, five-spiced honey, and lemon. Yum.

Ikura – salmon roe
The name says it all. The Ikura cocktail uses real ikura (salmon roe), sparkling sake, and yuzu acid. Although there are plenty of Japanese-inspired cocktails available, this one has got to be the most unique. For the adventurous, another must-try at Native is Antz, a rum-based cocktail which uses crunchy ants – no surprises there – as an edible garnish.

Operation Dagger launched their new cocktail menu in July and the lineup is as edgy as ever. In addition to parsley, capers, and honey vinegar, the truly eyebrow-raising ingredient in St John is bone marrow.

Rain – edible stone
Tippling Club’s latest cocktail menu, Sensorium, is scent-themed, and customers are encouraged to choose their drink based on the aroma they like the most. The refreshing Rain cocktail is served with an edible stone, but worry not, you won’t be breaking any teeth eating it. The stone, which looks like a rain cloud, is actually a dehydrated yoghurt sponge cake. On top of that, charcoal powder gives it a grey appearance.
