Gyozas – these delicious, savoury Japanese fried dumplings are no longer the dull side dish you get at a Japanese restaurant, but rather, have evolved to become a menu highlight at many eateries. Gyozas, also known as “pot stickers”, are dumplings stuffed with meat (typically pork or chicken), vegetables, soy sauce and sesame oil, all wrapped in a thin dough.

If you think that gyoza bears a striking similarity in appearance and taste to Chinese dumplings, you’re not entirely wrong. Gyoza actually traces its roots back to China from the popular Chinese dumpling jiaozi, which the Japanese soldiers encountered in Northern China during World War II. So delectable were these jiaozi dumplings that they sought to recreate the dish they had discovered and come to love – in fact, gyoza is actually the Japanese pronunciation of jiaozi! To cater to the local tastes, the recipe was tweaked, resulting in the pot stickers you find at ramen bars today that feature a thinner skin and a more lightly-seasoned filling.
