Easy recipe: Spinach, artichoke cream and a broken egg

Try this light and quick recipe, perfect for very hot evenings.

Serves 4 | Takes 40 minutes

Ingredients

800g Spinach
60g Cream of artichoke
5 Cloves of garlic
3 Stalks of chinese chives
2 Stalks of lemongrass
4 Eggs
80g butter
Some roasted sesame seeds
Salt to taste
1 tbsp sesame oil
80g Chilli jam
1 Lemon (juiced)

Method

1 . Poach the eggs for 6 min.
2 . Cool and leave them aside
4 . Cook spinach in a large skillet , heat half the butter and add 1 stalk lemongrass, continue to cook for 30 seconds. Leave to drain.
5. Heat the cream of artichoke. Mix chives , minced garlic, spinach and sesame oil.
6 . Divide the spinach on each plate. Place the egg and sprinkle some sesame seeds .
7 . Mix the chilli jam and lemon juice, then pour some of this condiment on each plate.
8. Puncture the egg to reveal the yolk if you like!
