Gluten Free Spring Menu: Greek Caviar Zucchini Salad
updated the 11 June 2014 à 23:11Quickly becoming the new hip, healthy and environmentally conscious way to eat, we list three easy-to-make and refreshingly light Gluten-free recipes, to enjoy this spring.
Preparation time: 10 minutes
Cooking time : 5 minutes
Serves 4
Ingredients:
- 4 slices of gluten free bread
- 600g zucchini
- 20 cubes of feta herb cheese
- 12 black Greek olives
- 1 clove garlic
Method:
• In a saucepan, boil a large volume of salt water. Wash zucchini, cut into thin slices and cook for 5 minutes in boiling water.
• Drain the zucchini and rinse under cold water. Meanwhile, cut the olives into small cubes and set aside in a bowl. Peel the garlic clove and degerminate.
• Place the cubed feta cheese with herbs in a blender, add the zucchini, garlic and mix everything until you get the desired consistency.
• Taste and adjust seasoning preparation if necessary. Refrigerate.
• To serve, toast the slices of country bread in the toaster or oven. Cut each slice into 4 rectangular pieces and spread with caviar.
• Add a few pieces of olives on the pieces of bread and eat immediately.
