Recipe: Cold Truffle Pasta

Our CHEF IN HEELS Simbian Chua shares her cold pasta dish recipe with us. Perfect as a light meal on a hot day…

Serves 2 | Takes 20 minutes

Ingredients:

200g Spaghetti
5 Stalks of chives (chopped)
50g of seaweed (powdered)
2.5 Tbsp of Truffle oil
1 Tbsp of sesame sauce
2 Tbsp of extra virgin olive oil
Salt and Pepper to taste
Salad leaves
Cut fruits
4 cooked shrimps

Method:

  1. Bring salted water to boil.
  2. Put Spaghetti in and boil for 8 minutes
  3. Immediately soak in cold water.
  4. Drain and place in big mixing bowl.
  5. Add the chopped chives, seaweed, truffle oil, sesame oil and olive oil into the mixing bowl.
  6. Mix well and don’t forget the salt and pepper to taste.
  7. Refrigerate with the pasta covered till cool.
  8. Assemble the salad leaves, cut fruits, shrimps and cold pasta on the plate.
  9. Serve with big smile!
