10 Summer Desserts: Strawberry tart with olive oil cream

The famous strawberry tart with a unique twist.

Preparation: 20 min

Rest the strawberry tart Overnight

Makes 12 tarts

Ingredients:
– 12 tarts cooked in sweet dough
– 150g strawberries
– 50g mascarpone
– 60g of cream
– 25g icing sugar
– 1 egg yolk
– 1 sachet of vanilla sugar
– 2 tablespoons olive oil
– Zest of one lime

Method:

1. Whisk the egg yolk with a tablespoon of olive oil, icing sugar and vanilla sugar.
2. Separately, whip the liquid then add the mascarpone cream.

3. Gently fold the whipped cream into egg mixture and sugar. Allow to cool at least 12 hours.
4. Once the cream has cooled, spread it over the pie crust.

5. Arrange strawberries over the tart​​. Sprinkle a few drops of olive oil and garnish with lime zest.
