10 Summer desserts: Strawberry cake with rose biscuits

This is the perfect sweet-treat to go alongside your afternoon tea!

Serves: 4 people

Ingredients:
– 250 g strawberries France
– 1 packet of rose biscuits (275g)
– 250g mascarpone
– 2 egg yolks
– 80g sugar
– 1 sachet of vanilla sugar
– 8 tablespoons cane syrup
– 2 tablespoons white rum
– 2 sprigs of mint
Method:
1. Mix the syrup and rum. Line a square or rectangular dish with plastic wrap.

2. Whisk the eggs, sugar and vanilla sugar with an electric mixer until the mixture becomes pale yellow, then add the mascarpone, whisking at low speed.
3. Pass the strawberries under cold water, drain, remove the stalks and cut them in half.

4. Dip the biscuits for 1 second in rum syrup and put the first layer in the bottom of the dish

5. Spread a layer of cream over a layer of strawberries, putting the cut side flat on the cream.

6. Even out a layer of cream and finish with a layer of sponge, soaked in the same way as the syrup.
7. Fold the film on the cookies, press lightly to press them into the cream and refrigerate 4 hours.

Tip: You can make this cake the day before, it will be even better because the scent of strawberries will be absorbed into the cookies and cream. You can also serve this dessert warm.
