10 Summer Desserts: Charlotte of Asparagus with smoked duck

Try this delicious French custard, with a savoury treat of smoked duck.

Refrigeration : 6h

Cooking time: 10 minutes

Serves 4-6 people

Ingredients:

– 7/800gr Asparagus
– 20cl liquid cream
– 4 leaves of gelatine
– 12 slices of smoked duck breast

Method:

1. Immerse gelatin sheets in cold water. Peel the asparagus. Cut round heads at the height of the circle of pastry.

2. Cook heads 3 to 4 minutes in boiling salted water for 10 minutes.

3. Cool them immediately in ice water, then drain.
4. Drain gelatin, melt in a saucepan over very low heat, stirring.

5. Mix the asparagus stems with a mixer, add the melted gelatin while continuing to mix and finally, the salt and pepper .
6. Add the whipped cream into the asparagus puree .
7. Line a stainless steel circular pan or a charlotte mold with asparagus heads.    8. Pour the mixture into it.

9. Refrigerate at least 4 hours before turning gently.

Divide the slices of smoked duck breast on charlotte before serving.
