There are many reasons to love this orange vegetable so why not include it in your appetizer, main course, desserts, beverage and snacks? We show you how.

Rich in vitamin A, low in fat and calories, yet  carrots are commonly relegated the role of supporting actor on the grand stage of salad ingredients. Lettuce, cherry tomatoes, even cucumbers come first before anyone considers putting in a carrot. The status of the carrot is fast changing however as they are now considered the ultimate health food.

The crunchy orange vegetable is bursting with key vitamins and minerals whose benefits include improved eyesight, cancer prevention, healthier skin, a better immune system and best of all, the slowing down of the ageing process.  Eating raw carrot sticks may be the easiest way to enjoy the food at snack time, but it is not your only option when it comes to eating this vegetable as a healthy snack. Puree it into a soup, mix it up with your veal, or satisfy that sweet tooth in the form of a carrot cake.
