5 Chocolate Recipes: Pure Chocolate Mousse with Pistachio

Serves 6
Ingredients:
For the mousse:
200g Dark chocolate
6 egg yolks
30g Powdered Sugar
30g Pistachios
For the cream :
½ cup Skim Milk
2 Egg yolks
40g Powdered Sugar
15g Pistachio Paste
3ml Full Cream
Method:
For the mousse:
1) Melt the chocolate in a bain marie. Separate the whites from the yolks. Using an electric whisk, beat the egg whites with sugar, they should be firm . Mix the yolks with the melted dark chocolate. Then mix 1/3 of the egg whites to the preparation and the rest gently.
2) Clear the chocolate mousse obtained into a container, then refrigerate with film over it.
For the cream :
1) Heat the milk in a saucepan, then mix the pistachio paste once the milk is warm
2) In a bowl, beat the egg yolks with the sugar. Then pour the hot milk over and mix. Pour the mixture to the saucepan and cook the custard over low heat , stirring constantly with a silicone spatula. The custard is cooked at 84°C. When the cream is thickened and coats the back of a spoon, remove from heat and remove in a bowl. Add the cream to stop cooking .
3) In a bowl , pour some custard cooled and then make using a spoon beautiful dumplings chocolate mousse. Then sprinkle with a few flakes of crushed pistachios .
