Light Sunny Summer Recipes: Spinach Croque Madame

Try this spinach-infused version to add a kick to this French favourite.

Preparation time: 10-20 min
Cooking time : 5 min

Serves 2

Ingredients:

  • 80 g of spinach (a good handful)
  • 2 slices of bread
  • 6 quail eggs
  • 10g butter
  • 10g fresh ginger
  • 1 tsp olive oil
  • Salt and Pepper

Method:

1) Toast the bread. Wash the spinach. Sauté for 2 minutes with a little olive oil and add salt and pepper to taste. Season with freshly grated ginger

2) With the tip of a knife, open quail eggs and cook the dish in a nonstick skillet over low heat with a little butter

3) Arrange the toasts on each file toast a little spinach with ginger and 3 quail eggs fried

Flavours: Spinach fondue is a basic that fits in many with many dishes: in a quiche or a risotto with gnocchi, fresh pasta with parmesan petals or casserole eggs dressed with fresh chopped coriander for an exotic or sorrel for a more sour touch, as an accompaniment to fish … it all goes!
