Light Sunny Summer Recipes: Cherry Clafoutis with Pistachio

Refuel your good mood with some vitamins that only the freshest fruits and vegetables of the season can offer. Try this recipe!

Preparation time: 15 min
Cooking time: 45 min
Serves 4
Ingredients:

  • 600g of cherries
  • Sugar 100g
  • 3 eggs
  • 100g flour
  • 25cl of milk
  • 20cl of liquid cream
  • 80g shelled pistachios
  • 1 drop of bitter almond for flavouring

Method:

1) Preheat oven to 180°C. Wash the cherries, then dry pits. Coarsely crush the pistachios in a mortar with a pestle.

2) In a bowl, break the eggs and beat with sugar, using a fork. Add successively, flour, milk, cream and pistachios and mix well until smooth.

3) Scent of a drop of almond flavouring (attention to use in moderation: the bitter almond is a very powerful scent that may overpower the flavour of the spice).

4) Divide the cherries in a baking dish (or individual molds for crème brûlée)

5) Pour the clafoutis and bake for 45 minutes cooking.

Serve warm or cold.
Achievable with all the fruits of the season.

Tip:

Traditionally, in the clafoutis, cherries are not pitted; in which case pay attention to prevent your guests from doing so!
