10 Summer Desserts: Cucumber Cheesecake

A tasty cucumber cheesecake, perfect for the summer season.

Preparation: 30 minutes

Rest: 4 hours
Serves: 4 people

Ingredients:

-1 cucumber
– 250 g cream cheese
– 2 tablespoons chopped mint
– 25 cl of full cream
– 3 sheets of gelatin
– 100 g of digestive biscuits
– 65 g butter
– pepper

Method:

1. Fill a pan with aluminum foil for easy removal of the cheesecake.
2. Pour the digestive biscuits in a mixer bowl and mix to reduce fine crumbs.

3. Add the softened butter and blend again to obtain a paste.

4. Pour into the pan, spread in an even layer and flatten well with a spatula.
5. Cut the cucumber in half. Further cut the first half into thin slices.
6. Split the other half in half and remove the seeds. Grate and pour into a colander. Let drain time to prepare the cream.
7. Put the gelatine to soak 10 minutes in a glass of cold water.

8. Take 2 tablespoons of cream, bring to boil and let it melt the softened gelatine.     9. Add the rest of the whipped cream – make sure it is cold and not too thick.
10. Whip the cream cheese with grated cucumber and melted gelatin.

11. Add the whipped cream and mix well.

12. Pour the biscuits, smooth out the surface and place in the fridge for at least 4 hours.

When ready to serve, carefully remove the cheesecake from the dish and decorate with thin slices of cucumber. Sprinkle a round of pepper on top and enjoy!
