10 summer starters: Asparagus with citrus

Zesty and fresh – this asparagus with citrus dish will awaken your tongue and taste buds

Asparagus with Citrus

For 4 people

Preparation time: 15 minutes

Cooking time: 10 minutes for asparagus

Ingredients:

– 1kg Asparagus
1 orange
1 lime
1 grapefruit
– 1 tablespoon honey
– 4 tablespoons wine vinegar
5cl sunflower oil

Method:

  1. Peel the orange and lemon and juice.
  2. Squeeze the grapefruit extract the juice.
  3. Boil honey for 3 minutes in a saucepan with grapefruit juice and add vinegar.
  4. Remove pan from heat, add the oil, whisking briskly. Season the vinaigrette.
  5. Peel the asparagus, bake for 10 minutes.
  6. Put citrus areas in dressing, lightly warm the whole.

Serve warm asparagus spooning the dressing.
