10 summer starters: Asparagus with citrus

For 4 people
Preparation time: 15 minutes
Cooking time: 10 minutes for asparagus
Ingredients:
– 1kg Asparagus
– 1 orange
– 1 lime
– 1 grapefruit
– 1 tablespoon honey
– 4 tablespoons wine vinegar
– 5cl sunflower oil
Method:
- Peel the orange and lemon and juice.
- Squeeze the grapefruit extract the juice.
- Boil honey for 3 minutes in a saucepan with grapefruit juice and add vinegar.
- Remove pan from heat, add the oil, whisking briskly. Season the vinaigrette.
- Peel the asparagus, bake for 10 minutes.
- Put citrus areas in dressing, lightly warm the whole.
Serve warm asparagus spooning the dressing.
