10 summer starters: Potato Salad

Preparation time: 5 min
Cooking time: 20 min
Serves 4 people
Ingredients:
– 500 g potatoes, cut into wedges
– 1 mango, peeled and chopped
– 1/2 red onion, peeled and finely chopped
– 1 handful of fresh basil leaves
– 1 handful of rocket leaves
– 1 pinch of ground pepper
– Lime juice
Method:
1. Place peeled and cut potatoes in a saucepan, cover with water, bring to boil and simmer covered for 15-20 minutes.
2. Meanwhile, place the mango, onion, basil, arugula and pepper in a large bowl and stir firmly.
3. Drain the potatoes and let them cool.
Arrange them in bowls. Sprinkle with lime juice and stir salad. Serve.
