Asparagus with small sauces
Serves 4 people Preparation time: 20 min Cooking time: 10 min
Method:
- Gently peel the asparagus and cut off the ends.
- Bake for 8 to 10 minutes in boiling salted water.
- Drain and cool immediately.
With Maltese Sauce: – 3 egg yolks – 250g butter – Juice and zest of an orange
Method:
- Put in a water bath over low heat.
- Let cool and thicken slightly, while beating egg.
- Add the butter in small pieces.
- Add the orange juice and zest.
5. Let mixture whiten by boiling for approximately 1 minute. Serve immediately with warm asparagus. With foamy sauce with chervil: – 1 large bunch of chervil – 20cl liquid cream – Salt and pepper
Method:
- Blanch a few seconds in boiling water chervil.
- Drain thoroughly.
- Mix with 5cl of cream and let cool thoroughly until it has hardened.
- Add whipped cream but do not let it harden like the rest of the cream.
- Toss the chervil mixture with salt and pepper.
Serve with warm or cold asparagus
