Light Sunny Summer Recipes: Jar of Radish

Ingredients:
- 1/2 bunch of radishes
- 150g ricotta
- 1 tsp wasabi
- 1 spring onion
- 2 tbsp olive oil
- 1 tbsp rice vinegar
- 2 pinches of salt

Method:
1) Remove the stalks and wash the radishes. Cut the radish tops. Take about a quarter of the tops. Dry and cut into thin slices.
2) Wash, dry and chop the spring onions (bulb and tops).
3) In a bowl, prepare vinaigrette: place a pinch of salt, vinegar and oil . Pour radish and dress with the vinaigrette. Add the chopped spring onion. Mix well.
4) In a bowl, with a hint of wasabi and a dollop of ricotta to dilute. Add remaining ricotta and mix well.
5) Mount glasses : drop in each glass a little ricotta wasabi, the radish tops and finish with chopped radish salad.
Serve according to the taste with buttered brown bread or breadsticks with sesame.
Tip: Three quarters of the remaining stalks can be used to make a delicious soup. Wash, chop coarsely and melt with a knob of butter in a saucepan for 5 minutes. Add on 4 plates, a potato puree (washed , peeled) cut into cubes 75 ounces of water , a little salt and cook for 15 min. Mix with cream and enjoy!
