Recipe: Sweet Potato Madeleines

A sweet potato dessert? Of course! Revisit the classic Madeleine with this sweet vegetable that will invite new flavours to your table.

Preparation time:  Approx. 60 minutes (plus cooling time)

Enough for approx. 20 pieces:

125g of sweet potatoes

2 eggs (large size)

50g of soft butter

1 teaspoon of orange zest

125g of sugar

200g flour

½ teaspoon of baking powder

1 teaspoon of icing sugar for dusting

Butter and flour to coat the madeleine mold

Preparation:

1.  Peel, cut into small pieces and cook the sweet potatoes for 10 minutes in salted water. Drain and let cool for a moment. Reduce them and mash them with a potato masher. Let cool once completely mashed. Grease the bottom of a madeleine pan and sprinkle a thin layer of flour. Separate the yolks from the egg whites. Beat the egg whites until stiff.

2.  Add the butter, orange zest and sugar to the mashed sweet potatoes. Beat well until smooth. Put some egg yolks one by one and mix thoroughly. Mix flour with baking powder and stir it quickly.Then stir in 1/3 of the egg whites. Finish by gently incorporating the remaining whites.

3. Put the dough in a pastry bag with a large tip and spread it into the mold cavity madeleine. Bake in preheated 200°C (convection oven: 180°C) oven for 10 to 12 minutes. Remove the pan from the oven. Unmold the madeleines. Wash the mold. Grease and flour it again and fill the rest of the dough.  Cook the same way.

4.  Let cool on a madeleine cake rack. Sprinkle with icing sugar and serve immediately.
