Dessert recipe: Sunshine cake

A delicious and light grapefruit-based dessert to accompany our afternoon tea.

Preparation time: 15 minutes – Cooking time: 50 minutes

Ingredients for 6 people: 

For the cake:

1 Grapefruit

250g flour

250g sugar

70g soft butter

150g Philadelphia ® cream cheese

2 eggs

50ml of milk

50ml of oil

1 tsp. vanilla-flavoured coffee

½ teaspoon of baking powder

1/2 teaspoon of salt

For the icing:

150g icing sugar

40g pistachios

 Method:

1. Preheat oven to 160 °C (th.5 /6). Grease and flour your pan.

2. Mix flour, baking powder and salt in a bowl.

3. Take the grapefruit zest and squeeze. Reserve two tablespoons of juice for icing.

4. Loosen Philadelphia and butter with a whisk then add the sugar until you obtain a smooth cream. Add the eggs one by one.

5. Stir the oil, juice, grapefruit zest and vanilla. Then add the flour and milk.

6. Pour  the batter into the pan and bake for about 50 minutes. Unmold and let cool on a rack.

7. Place the icing sugar in a bowl and pour grapefruit juice over, mixing it well.

8. Pour the glaze over the cake and gently sprinkle crushed pistachios.
