From fries to pastas, who knew the humble salted egg was so versatile.

Many of us may fondly remember salted eggs as a liberator to all the times we had to endure eating boring plain congee. Today, they are the favourite of new-age chefs to experiment with.

Salted egg dishes continue to pop up all over menus in Singapore, proving to be more than just another food trend. The salted egg so easily harmonises with a myriad of dishes, as its savoury taste is light and understated.

The unassuming salted egg has deep roots in Chinese culture. These preserved duck eggs were often brined or packed in salted charcoal to get its signature look and taste. Traditionally, these eggs were used in mooncakes, glutinous rice dumplings and accompanied plain congee for breakfast.
