Fats are not necessarily harmful for our health, especially if they are extracted from a healthy point of origin. The expert explains.

“Eliminating all fat from our food is dangerous”, warns Béatrice de Reynal. Indeed, the membranes of our cells are made of fats that are regularly renewed – those of our skin, eyes and brain. When we are deprived of fat, we develop chapped skin and a difficulty with concentration. Additionally, the lack of omega 3 also harms the heart. Hence, there is a need to include some fatty foods in our meal, but with moderation and by making careful choices. opt for fishes (sardine, tuna, mackerel, salmon) and of course vary the amount of oil used for seasoning – colza, soya, hazelnut – these are good sources of omega 3. Similarly, some mixtures of oil, especially chosen for their benefits to the body (Escoline 3C of PiLeJe with organic oil of safflower, colza and camelina) are high in omega 3.

As regards some vinaigrette, opt for oils of colza or soya, which are more fluid than olive oil. This enables making more vinaigrette with a single soup spoon. Simply add lemon juice (or a citrus fruit) to one soup spoon of water and a little tarragon or chive, and it’s done.
