For those unfamiliar with the Mid-Autumn Festival, it is a essentially a Chinese “harvest” festival of sorts – somewhat similar to Thanksgiving. Mooncakes are one of the highlights of this annual Chinese festival, especially made more so with the innovative culinary varieties that bakeries in Singapore spoil us with each year.

Mooncakes, also known as ‘yue bing’ in Mandarin, are pastries consisting of a sweet, dense filling, traditionally made from lotus paste with a salted duck yolk at its center, and wrapped within a thin exterior. Today, mooncakes come in a mind-blowing smorgasbord of flavours, shapes, and colours. The pillow-soft snowskin variety have slowly edged out its traditional savoury counterparts, and fillings with modern fusion flavours are quickly becoming a festive favourite.
